Andalusian Pork Rolls Recipe



  1. 2 Tbsp. Chopped fresh parsley
  2. 2 x Garlic cloves, chopped
  3. 1 x Thick boneless pork loin chops, (about 3 ounces each)
  4. 6 x Thin slices serrano ham or possibly prosciutto, (about 2 ounces)
  5. 2 lrg Large eggs, lightly beaten with 2 tsp. lowfat milk
  6. 1 c. Plain dry bread crumbs, (about) Extra virgin olive oil, (for frying)


  1. Mix parsley and garlic in small bowl.
  2. Place pork between 2 sheets of waxed paper.
  3. Using mallet, lb.
  4. pork to 1/4-inch thickness.
  5. Cut each pork cutlet into 5x3-inch rectangle.
  6. Top each with 1 ham slice.
  7. Sprinkle with parsley mix.
  8. Starting at short end, roll up each cutlet; secure with toothpicks.
  9. Dip into egg mix, then coat with bread crumbs.
  10. Pour oil into deep medium skillet to depth of 1 inch and heat to 375F.
  11. Add in pork rolls and fry till golden brown and cooked through, about 13 min.
  12. Drain on paper towels.
  13. Cut rolls crosswise into 3/4-inch-wide slices.
  14. Serves 6.
