Apple Cinnamon (Breakfast) Bruschetta

Ingredients

  1. 2 tablespoons Fiber One or naturally sweetened fat-free vanilla yogurt
  2. Pinch cinnamon
  3. 2 whole-wheat mini (3-inch-diameter) pita circles, toasted
  4. 6 tablespoons Apple Cinnamon Bruschetta Topping (recipe follows), divided
  5. 1 medium apple, cut into small cubes (roughly 1/4-inch)
  6. 2 teaspoons fresh lemon juice
  7. 1/2 teaspoon cinnamon
  8. (makes 2 serving)

Directions

  1. In a small bowl, mix the yogurt with the cinnamon.
  2. Place the pita circles on a small plate.
  3. Top each pita evenly with half of the yogurt mixture and then half of the bruschetta topping.
  4. Serve immediately.
  5. In a resealable plastic container, stir the apples, lemon juice, and cinnamon until well combined.
  6. Can be stored in the refrigerator for up to 2 days.
