Alaska Bouillabase Recipe

Ingredients

  1. 2 x Dungeness crabs
  2. 1 lb shrimp">Shrimp or possibly prawns
  3. Halibut and/or possibly salmon, clams or possibly other fish
  4. 1 lrg Onion, sliced
  5. 1 bn Green onions (include some tops)
  6. 2 clv Garlic, minced
  7. 1/3 c. Minced parsley
  8. 1 x Green pepper, diced (if you like)
  9. 1 can Tomato puree
  10. 1 can Tomato sauce
  11. 1 can Tomato pcs
  12. 1 c. White wine (add in more if needed)
  13. 1 c. Water
  14. Bay leaf
  15. 1/4 tsp Pepper
  16. 1 pch Rosemary, thyme, fennel, saffron, celery seed (saffron is expensive but great)

Directions

  1. Saute/fry onion, pepper and garlic in extra virgin olive oil.
  2. Add in parsley, all tomato sauces, wine, water, and seasonings.
  3. Bring to rapid boil, then simmer 1 hour.
  4. Add in all fish but clams, simmer 2-3 min.
  5. Add in washed clams and simmer till open.
  6. Note: Sourdough French bread and green salad are good accompaniments.
