Alexander Sauce Recipe

Ingredients

  1. 6 Tbsp. unsalted butter, divided
  2. 1/2 c. minced yellow onion
  3. 1 1/2 Tbsp. flour
  4. 1/2 c. clam juice
  5. 2 c. whipping cream
  6. 1/2 tsp salt
  7. 1/4 tsp white pepper
  8. 1 c. uncooked small shrimp
  9. 5 ounce white lump crabmeat
  10. 1 dsh cayenne pepper

Directions

  1. Heat 3 Tbsp.
  2. of the butter in a large saucepan.
  3. Add in the onion and cook till soft.
  4. Stir in the flour and cook about 2 min, stirring constantly.
  5. Slowly pour in the clam juice and cream.
  6. Season with salt, pepper and cayenne.
  7. Cook, stirring, about 3 min.
  8. In another saucepan, heat the remaining 3 Tbsp.
  9. butter.
  10. Add in the shrimp and cook about 2 min.
  11. Add in the crabmeat and cook about 1 minute.
  12. Stir into cream mix.
