Almond Coffee Snow Balls Recipe



  1. 1/2 c. Butter, softened
  2. 2 Tbsp. Sugar
  3. 1 1/2 tsp Instant coffee Or possibly espresso coffee pwdr
  4. 1/2 tsp Almond extract
  5. 1 c. All-purpose flour
  6. 1 c. Whole natural almonds, toasted * and very finely minced Powdered sugar


  1. Heat oven to 350 degrees.
  2. Finely chop toasted almonds.
  3. Coat baking sheet with vegetable cooking spray or possibly line with baking parchment.
  4. In large mixer bowl beat butter, sugar, coffee pwdr and almond extract till fluffy.
  5. Fold in flour and almonds to blend thoroughly.
  6. Form mix into 1-inch balls and place 1 inch apart on baking sheet.
  7. Bake in center of oven 15 to 18 min till set and bottoms are lightly browned.
  8. Cold 5 min, then remove to racks to cold.
  9. Coat with powdered sugar while still hot.
  10. When completely cold, store in airtight container.
  11. Servings: 36 cookies
  12. * To toast almonds, spread in an ungreased baking pan.
  13. Place in 350 degree oven and bake 5 - 10 min or possibly till almonds are light brown; stir once or possibly twice to assure even browning.
  14. Note which almonds will continue to brown slightly after removing from oven.
