5 Bean Soup

Ingredients

  1. 1 cup pinto beans
  2. 1 cup navy beans
  3. 1 cup black-eyed peas
  4. 10 cups water
  5. 1 cup chicken broth
  6. 1 cup onions diced
  7. 16 ounces tomatoes cut
  8. 3/4 teaspoon thyme
  9. 1/4 teaspoon black pepper
  10. 1 cup red beans
  11. 1 cup great northern beans
  12. 2 each bay leaves whole
  13. 2 pounds ham bone meaty
  14. 1 1/2 cups smoked ham
  15. 1 tablespoon chili powder
  16. 1/4 teaspoon worcestershire sauce
  17. 1 medium carrots grated

Directions

  1. Place beans into 4 quart kettle, cover with 2 inches of water and allow to soak overnight.
  2. Drain water then add ham bones, water and bay leaves.
  3. Simmer covered for 2 hours.
  4. Remove ham bones and return any meat to kettle.
  5. Add bouillon, onions, chili and garlic powder, thyme, pepper, tomatoes, carrot and worcestershire sauce.
  6. Cover and simmer for 1 hour.
  7. Add water as needed.
  8. Serve with hot cornbread.
