Achiote Chicken With Black Bean Sauce Recipe



  1. 2 sm Chicken breasts, skin on per person
  2. Oil for frying
  3. Annatio seeds, or possibly block, for Anchiote paste
  4. Salt and pepper
  5. 1 can Black beans
  6. Minced onions
  7. Fresh tomatoes, minced
  8. Garlic, minced
  9. 1 pch Chilli pwdr


  1. Blend the annattio (seeds or possibly block) with some finely minced onions, a litte water and seasoning to make a smooth paste.
  2. Coat each chicken with the paste and pan fry, skin side down first, over a low heat till cooked.
  3. Sprinkle with a little salt before taking out of the pan.
  4. To make black bean salsa: Heat the black beans with the minced onions, tomatoes, garlic and a little chilli pwdr.
  5. To serve: Spoon some of the black bean sauce onto a plate and place the chicken on top.
  6. top with some minced fresh coriander to garnish.
