Artichoke, Chicken & Rice Casserole

Ingredients

  1. 1 Tbsp. olive oil
  2. 1 small onion, chopped King Sooper's 1 lb For $0.99 thru 02/09
  3. 1 small red pepper, chopped
  4. 1 carrot, thinly sliced King Sooper's 1 lb For $0.99 thru 02/09
  5. 2 cups chopped cooked chicken Whole Foods 1 lb For $3.99 thru 02/09
  6. 1 cup cooked whole grain brown rice
  7. 1 can (14 oz.) artichoke hearts, drained, chopped
  8. 1 can (10.75 oz.) condensed cream of chicken soup
  9. 2/3 cup milk
  10. 1/2 cup KRAFT Finely Shredded Italian* Five Cheese Blend
  11. 1/2 tsp. Italian seasoning
  12. 3 Tbsp. KRAFT Grated Parmesan Cheese

Directions

  1. Heat oven to 350 degrees F.
  2. Heat oil in large skillet on medium heat.
  3. Add onions, peppers and carrots; cook and stir 3 to 4 min.
  4. or until crisp-tender.
  5. Remove from heat.
  6. Combine cooked vegetables with all remaining ingredients except Parmesan.
  7. Spoon into 2-qt.
  8. casserole.
  9. Sprinkle with Parmesan; cover.
  10. Bake 40 min.
  11. or until heated through, uncovering after 20 min.
  12. Let stand 10 min.
  13. before serving.
