"Butterless" butter chicken (modified from Everyday Indian cookbook)

Ingredients

  1. 2 tbsp Ginger, finely chopped
  2. 2 tbsp Garlic, finely chopped
  3. 1 1/2 lb Chicken Breasts s or thighs, cut into bitesized pieces
  4. 1 tbsp Garum Masala
  5. 1 tsp Tumeric, ground
  6. 1 cup Coconut milk
  7. 2 medium Onions
  8. 2 tbsp Grape seed oil
  9. 3 tbsp Tomato paste
  10. 1/2 cup Water
  11. 1/2 tsp Salt

Directions

  1. Cook onion in oil till golden brown.
  2. Add garlic and ginger.
  3. Cook 30 seconds.
  4. Add tomato paste, garum masala, and Tumeric and cook for 1 minute on medium heat.
  5. Add chicken and cook til partly done, about 5 to 7 minutes.
  6. Add coconut milk and water.
  7. Cook til chicken is done.
  8. Serve with basmati rice
