Aloha Chicken

Ingredients
- 5 lb chicken
- 1/4 tsp paprika
- 1/4 cup pineapple juice
- 3 clove garlic
- 1/2 cup red pepper, chopped
- 1/2 cup green pepper, chopped
- 1 cup pineapple, chopped
- 1 cup chicken stock
- 1 cup pineapple preserves
- 1/4 cup pineapple juice
- 1 tbsp lime juice
- 1/2 tbsp brown sugar
- 1 tbsp soy sauce
- 1/4 tsp ground ginger
- 1 pinch cayenne pepper
- 1 tbsp cilantro, chopped
Directions
- preheat oven to 350F.
- season chicken inside & out with salt, pepper, & paprika.
- fill roaster with pineapple juice, chicken stock & garlic cloves, then place chicken on top.
- roast for 45 minutes.
- to prepare the glaze, add preserves, juices, Brown sugar, soy sauce, ginger, & cayenne to a sauce pan over low heat.
- whisk the ingredients until well incorporated, about 5 minutes.
- the consistency should he thick.
- whisk in cilantro just before glazing.
- after 45 minutes, remove roaster from oven.
- fill roaster with peppers & pineapple.
- brush the glaze onto chicken & place back in oven for 20 minutes until skin is golden Brown.
- allow 4-5 minutes to cool.
- remove chicken & serve with peppers & pineapple chicken
