Aloha Chicken

Ingredients

  1. 5 lb chicken
  2. 1/4 tsp paprika
  3. 1/4 cup pineapple juice
  4. 3 clove garlic
  5. 1/2 cup red pepper, chopped
  6. 1/2 cup green pepper, chopped
  7. 1 cup pineapple, chopped
  8. 1 cup chicken stock
  9. 1 cup pineapple preserves
  10. 1/4 cup pineapple juice
  11. 1 tbsp lime juice
  12. 1/2 tbsp brown sugar
  13. 1 tbsp soy sauce
  14. 1/4 tsp ground ginger
  15. 1 pinch cayenne pepper
  16. 1 tbsp cilantro, chopped

Directions

  1. preheat oven to 350F.
  2. season chicken inside & out with salt, pepper, & paprika.
  3. fill roaster with pineapple juice, chicken stock & garlic cloves, then place chicken on top.
  4. roast for 45 minutes.
  5. to prepare the glaze, add preserves, juices, Brown sugar, soy sauce, ginger, & cayenne to a sauce pan over low heat.
  6. whisk the ingredients until well incorporated, about 5 minutes.
  7. the consistency should he thick.
  8. whisk in cilantro just before glazing.
  9. after 45 minutes, remove roaster from oven.
  10. fill roaster with peppers & pineapple.
  11. brush the glaze onto chicken & place back in oven for 20 minutes until skin is golden Brown.
  12. allow 4-5 minutes to cool.
  13. remove chicken & serve with peppers & pineapple chicken
