Apricot Delight Recipe



  1. 2 lb Ripe apricots
  2. 2 pt Quick-cooking tapioca
  3. 3/4 x Sugar
  4. 2 x Heavy whipping cream
  5. 3 pt Sugar
  6. 1 x Toasted sliced almonds*
  7. 3 pt Lemon juice
  8. 1/2 pt Vanilla


  1. *Note: Almonds are optional.
  2. Remove pits from apricots and cut into l/4 inch thick wedges.
  3. Cut each wedge in half crosswise.
  4. Place apricots into hig-sided 2 qt microwave-safe casserole.
  5. Add in 3/4 c. sugar, lemon juice and tapioca.
  6. Stir till apricot slices are proportionately coated.
  7. Let stand l5 min.
  8. Cover casserole with lid and microwave on HIGH (l00% power) l2 to l5 min, stirring till mix comes to full boil.
  9. Mix is cooked when beads of tapioca become translucent/soft.
  10. Let mix stand, covered, l0 min.
  11. Remove lid and cold to room temperature.
  12. Cover and chill l to 2 hrs, till very cool.
  13. Whip cream with remaining 3 tbsp sugar and vanilla till stiff peaks start to create.
  14. Fill 8 wine or possibly dessert glasses about l/3 full with apricot mix.
  15. Cover apricot layer with about 3 tbs.
  16. of whipped cream.
  17. Cover cream layer with remaining apricot mix.
  18. Top with dab of remaining whipped cream.
  19. Garnish with sliced almonds.
  20. Serve immediately.
