Brunswick Stew

Ingredients

  1. 1 (2 lb.) chicken
  2. 3 c. water
  3. 1 1/2 tsp. salt
  4. 3 potatoes
  5. 1 onion
  6. 1 (10 oz.) box frozen limas
  7. 1 c. frozen or 1 can corn
  8. 1 can tomatoes
  9. salt and pepper to taste
  10. 1/4 c. butter

Directions

  1. Bring chicken to boil in salted water.
  2. Reduce heat and simmer 1 hour, until tender.
  3. Remove from both.
  4. Add vegetables to broth and simmer until tender.
  5. Strip chicken from bones in large pieces and add to stew last 5 minutes of cooking.
