Clam Chowder

Ingredients

  1. 6 to 8 lean slices diced bacon
  2. 2 c. diced, cooked potatoes
  3. 1 c. diced onion
  4. 2 cans minced clams, drained (reserve 1 c. clam juice)
  5. 2 c. half and half
  6. 1 c. water
  7. 2 Tbsp. butter
  8. salt and pepper to taste

Directions

  1. Dice bacon and onion. Saute in soup pot. Add remaining ingredients.
  2. Heat; do not boil.
  3. May be thickened, if necessary.
