Carrot Pineapple Salad

Ingredients

  1. 6 oz. pkg. orange jello
  2. 1 1/2 c. boiling water
  3. 2 Tbsp. lemon juice
  4. 20 oz. can chunk pineapple, drained
  5. 1/2 c. shredded carrots

Directions

  1. Completely dissolve jello in the 1 1/2 cups boiling water. Combine 1 cup water and ice cubes to make 2 1/2 cups water and ice.
  2. Add to jello with the 2 tablespoons lemon juice.
  3. Stir for 2 minutes.
  4. Let stand until slightly thickened.
  5. Fold in pineapple and carrots.
  6. Chill.
