Carol'S No-Fat Refried Beans



  1. 1 or 2 (16 oz.) cans no-fat refried beans (Rosarita is a good brand)
  2. 1 can each no salt added black beans and pinto beans, rinsed and drained
  3. 1 large tomato, chopped
  4. chopped onion to taste
  5. 1 can diced green chillies
  6. 1 can corn, rinsed and drained
  7. spicy or hot sauce to taste
  8. thick and chunky canned or bottled salsa to taste


  1. Mix all ingredients together. Store in refrigerator.
  2. Serve 1/2 cup of this mixture over 1 corn tortilla. Cook 3 egg whites and serve over tortillas and beans.
  3. Add 1 or 2 tablespoons fat-free sour cream.
