Herbed Tenderloin

Ingredients

  1. 4 lb. well trimmed beef tenderloin roast
  2. 2 Tbsp. grated Parmesan cheese
  3. 1 tsp. Italian seasoning
  4. 1/2 tsp. cracked black pepper

Directions

  1. Heat oven to 425°.
  2. Combine seasoning ingredients; press evenly into roast.
  3. Place on rack in a shallow pan.
  4. Roast approximately 45 to 50 minutes for medium rare to medium doneness. Remove roast when meat thermometer registers 140° for medium-rare or 155° for medium.
  5. Sprinkle with cheese.
  6. Let stand 15 minutes. Slice and season with salt.
  7. Makes 8 to 10 servings.
