Rice-Artichoke Salad

Ingredients

  1. 1 box chicken flavored Rice-A-Roni, cooked as directed (omitting butter), let stand until cool
  2. 1/4 c. onion, chopped
  3. 1/2 c. ripe black olives, chopped
  4. 1/2 green bell pepper, chopped
  5. 1 jar marinated artichoke hearts, drained (reserve juice) and chopped

Directions

  1. Add juice from artichokes with 1/2 teaspoon curry powder and 1/3 cup mayo; toss all together.
  2. Make 24 hours before serving. Will keep in refrigerator for weeks.
  3. Delicious.
