Cream Puffs



  1. 1 c. flour
  2. dash of salt
  3. 1 c. water
  4. 1/2 c. butter
  5. 4 eggs


  1. Preheat oven to 400°.
  2. Lightly grease 2 cookie sheets.
  3. Sift the flour and salt into a small bowl and set aside.
  4. In a medium-size saucepan boil the water and butter.
  5. Reduce the heat to low and add the flour all at once.
  6. Stir vigorously with a wooden spoon and cook and stir until mixture forms a ball.
  7. Remove from heat and cool about 3 minutes.
  8. Beat in eggs, one at a time, until smooth after each addition.
  9. Drop mixture by heaping tablespoonfuls onto the cookie sheet, about 3 inches apart.
  10. Bake 30 to 35 minutes or until golden brown and puffy.
  11. Turn off the oven.
  12. Slit or slice the top off each cream puff and return to the oven for about 3 minutes to dry the inside.
