Creamy Chicken Soup



  1. 5 c. chicken broth
  2. 4 boneless, skinless chicken breasts, cubed
  3. 3 c. frozen mixed vegetables
  4. 1 tsp. curry powder
  5. 1/2 tsp. crushed dried thyme
  6. 2 c. milk
  7. 1/3 c. all-purpose flour
  8. 1 green onion, thinly sliced
  9. salt and pepper to taste


  1. In a large saucepan, combine chicken broth, chicken, frozen vegetables, curry and thyme.
  2. Bring mixture to boil; reduce heat and simmer 1 hour.
  3. Whisk together milk and flour until flour is dissolved; stir into soup.
  4. Cook and stir until mixture thickens, then simmer 2 minutes more.
  5. Season with salt and pepper to taste. Ladle into bowls and sprinkle green onion slices on top.
