Stuffed Cabbage

Ingredients

  1. 24 large outer leaves from white cabbage
  2. 3 lb. lean ground beef
  3. 1 1/2 c. pitted prunes, diced
  4. 1/2 c. raisins
  5. 1/3 c. uncooked rice
  6. 2 medium onions
  7. 1 carrot, grated
  8. 3 eggs, lightly beaten
  9. 2 tsp. salt
  10. 1/2 tsp. ground black pepper
  11. 1/2 c. lemon juice
  12. 1 c. packed brown sugar
  13. 3/4 c. tomato puree
  14. 3 c. water

Directions

  1. Bring a large pot of water to a rolling boil.
  2. Drop in the cabbage leaves; blanch for 8 to 10 minutes.
  3. Remove from the pot, rinse in cool water and drain.
