Split Pea Soup

Ingredients

  1. 3 lb. split peas, washed
  2. 1/4 c. ham base
  3. 2 carrots, finely diced
  4. 1 onion, finely diced
  5. roux (flour and oil paste)
  6. 2 c. diced, cooked ham (optional)

Directions

  1. In a large pot, cover peas with water almost to top of pot. Cook on medium approximately 1 1/2 hours.
  2. Test for softness. Peas must be soft enough to mash.
  3. Add 1/4 cup ham base and mash. Thicken with roux.
