Split Pea Soup
- 3 lb. split peas, washed
- 1/4 c. ham base
- 2 carrots, finely diced
- 1 onion, finely diced
- roux (flour and oil paste)
- 2 c. diced, cooked ham (optional)
- In a large pot, cover peas with water almost to top of pot. Cook on medium approximately 1 1/2 hours.
- Test for softness. Peas must be soft enough to mash.
- Add 1/4 cup ham base and mash. Thicken with roux.
