- 2 Tbsp. red wine vinegar
- 1/4 tsp. salt
- 1/8 tsp. pepper
- 1 pt. cherry tomatoes, halved
- 2 small zucchini, thinly sliced
- 1 small onion, thinly sliced
- 1/3 c. crumbled cheese
- 1 c. salad oil
- In a large bowl, mix oil, vinegar, salt and pepper.
- Add tomatoes, zucchini, onion and cheese; toss lightly.
- Cover and chill.
- To serve, toss and spoon onto lettuce leaves.
