Chocolate Mousse



  1. 1 pkg. graham crackers
  2. 1 large box sugar-free chocolate pudding
  3. 1 carton 1% white milk
  4. 1 large pkg. lite frozen Cool Whip
  5. 1 tsp. vanilla extract
  6. 1/2 c. chopped (fine) pecans


  1. Mix pudding with milk by directions on package until thick. Stir in half of large container of lite Cool Whip with mixer until mixed; this will be soupy.
  2. Spread a small layer of this mixture on bottom of dish (9 x 9-inch).
  3. Layer every other layer with graham crackers; spread pudding on crackers.
  4. Last layer should be pudding.
  5. Sprinkle pecans on top for icing.
  6. Store in refrigerator.
