Strawberry-Pretzel Salad

Ingredients

  1. 2 c. crushed pretzels
  2. 1/4 c. sugar
  3. 1/2 c. oleo, melted
  4. 1 (8 oz.) pkg. cream cheese, softened
  5. 1/3 c. sugar
  6. 1 (8 oz.) Cool Whip
  7. 1 (6 oz.) strawberry Jell-O
  8. 2 c. boiling water
  9. 2 (10 oz.) frozen, sliced strawberries, undrained
  10. lettuce
  11. mayonnaise

Directions

  1. Combine first 3 ingredients; press into a lightly greased 13 x 9 x 2-inch baking dish.
  2. Bake at 250° for 10 minutes; let cool. Beat cream cheese on medium speed with mixer until light and fluffy; add 1/3 cup sugar, mixing until well blended.
  3. Fold in Cool Whip and spread over pretzel crust. Combine gelatin and boiling water in bowl, mixing until dissolved.
  4. Add cold water and chill until consistency of unbeaten egg white.
  5. Stir in strawberries; pour over cream cheese layer.
  6. Refrigerate until firm.
  7. Cut into squares.
  8. Serve on lettuce leaves and dollop with mayonnaise, if desired.
