Italian Cream Cake

Ingredients

  1. 1 stick oleo
  2. 1 tsp. vanilla
  3. 2 c. sugar
  4. 1 tsp. soda
  5. 1 c. chopped pecans
  6. 1/2 c. shortening
  7. 5 egg yolks
  8. 2 c. plain flour
  9. 1 c. buttermilk
  10. 1 can coconut
  11. 5 egg whites

Directions

  1. Cream oleo, shortening and sugar; add egg yolks.
  2. Then add flour and soda alternately with buttermilk.
  3. Add vanilla, coconut and pecans.
  4. Fold in egg whites.
  5. Bake at 350° for about 25 minutes.
  6. Makes 3 layers.
