Lasagna

Ingredients

  1. 1 lb. Italian sausage or ground beef
  2. 1 clove garlic, minced
  3. 1 Tbsp. basil
  4. 1 qt. can tomatoes
  5. 2 (6 oz.) cans tomato paste
  6. 10 oz. lasagna noodles
  7. 2 eggs
  8. 3 c. fresh Ricotta cheese or cottage cheese
  9. 1/2 c. Parmesan cheese
  10. 2 Tbsp. parsley flakes
  11. 1 tsp. salt
  12. 1/2 tsp. pepper
  13. 1 lb. Mozzarella cheese

Directions

  1. Brown meat; spoon off excess fat.
  2. Add next 4 ingredients. Simmer, uncovered, 30 minutes.
  3. Cook noodles in large amount of boiling, salted water.
  4. (Add 1 tablespoon cooking oil to noodles to keep them from sticking together.)
  5. Drain noodles when tender. Beat eggs; add remaining ingredients.
  6. Layer half of noodles, Ricotta filling, half of cheese and half of meat sauce.
  7. Bake at 375° for 30 minutes.
