Chili Con Carne

Ingredients

  1. 2 (1 lb.) cans red or kidney beans
  2. 1 large onion, chopped
  3. 1 green pepper, chopped
  4. 1 lb. ground beef
  5. 1 lb. can (2 c.) tomatoes
  6. 1 (8 oz.) can (1 c.) seasoned tomato sauce
  7. 1 to 1 1/2 Tbsp. chili powder
  8. 1 1/2 tsp. salt
  9. 1 bay leaf
  10. dash of paprika
  11. dash of cayenne

Directions

  1. Brown onion, green pepper and meat in a little hot fat.
  2. Add drained beans, tomatoes, tomato sauce, chili powder, salt, bay leaf, dash of paprika and dash of cayenne.
  3. Cover.
  4. Simmer 1 1/2 hours, adding reserved bean liquid or water, if needed.
  5. Makes 6 servings.
  6. Serves 6 to 8.
  7. Cooking time is 1 1/2 hours.
