Summer Squash Casserole

Ingredients

  1. 2 lb. yellow summer squash, sliced (6 c.)
  2. 1/4 c. chopped onion
  3. 1 can condensed cream of chicken soup
  4. 1 c. sour cream
  5. 1 c. shredded carrot
  6. 1 (8 oz.) pkg. herb seasoned stuffing or croutons (I like croutons)
  7. 1/2 c. melted butter or oleo

Directions

  1. Cook sliced squash and onion in salted boiling water 5 minutes.
  2. Drain.
  3. Combine soup and sour cream.
  4. Stir in carrot. Fold in squash and onion.
  5. Combine stuffing and butter.
  6. Spread 1/2 of stuffing in 12 x 9 x 2-inch pan.
  7. Spoon vegetable mixture on top.
  8. Spread remainder of stuffing on top.
  9. Bake at 350° for 25 or 30 minutes.
  10. Makes 6 servings.
  11. This is a great dish for a crowd.
