Whipped Topping

Ingredients

  1. 1/4 c. water
  2. 1 1/2 tsp. unflavored gelatin
  3. artificial sweetener to equal 2 Tbsp. sugar
  4. 1/4 tsp. vanilla extract
  5. 1/4 c. chilled evaporated skim milk

Directions

  1. In a small pan, sprinkle gelatin over water; heat slowly, stirring until gelatin dissolves.
  2. Pour into a small mixing bowl; add sweetener and vanilla and cool.
  3. Add chilled milk; beat at high speed until very thick.
  4. Cover and refrigerate.
