Cornbread Casserole

Ingredients

  1. 1 lb. bulk sausage
  2. 1 c. chopped green onions
  3. 1 (11 oz.) can condensed Cheddar cheese soup (undiluted)
  4. 1 (28 oz.) can tomatoes, drained and chopped
  5. 1 (4 oz.) can green chilies, drained
  6. 1 can diced potatoes
  7. 1 c. biscuit mix
  8. 1 c. self-rising cornmeal
  9. 1/2 c. milk (may need a little more)
  10. 1 egg
  11. 1/2 c. Cheddar cheese

Directions

  1. Heat oven to 400°.
  2. Cook sausage and onions until pork is brown.
  3. Drain and return to skillet.
  4. Add soup and next 3 ingredients.
  5. Bring to a boil and reduce heat; simmer 10 minutes. Spoon into greased casserole.
