Meat-Stuffed Peppers

Ingredients

  1. 4 green peppers
  2. 1 small onion, chopped
  3. 1 lb. ground beef
  4. 4 medium tomatoes, chopped
  5. 1 1/2 c. cut fresh corn (3 or 4 ears)

Directions

  1. Remove top and seeds from green peppers; parboil 5 minutes; drain.
  2. Halve peppers.
  3. Brown onion and meat; add tomatoes, corn and seasonings.
  4. Heat through.
  5. Place peppers in 9 x 13-inch pan and stuff and top with buttered crumbs.
  6. Bake at 350° for about 45 minutes.
  7. Serves 8.
