Crab (Or Shrimp) Bisque

Ingredients

  1. 1/2 c. chopped onion
  2. 1/2 c. sliced celery
  3. 1/4 c. butter or margarine
  4. 1/2 c. flour
  5. 4 1/2 c. water
  6. 1 chicken bouillon cubed
  7. 1 Tbsp. ketchup
  8. 1 can undiluted evaporated milk
  9. 1 bay leaf
  10. 1 tsp. seasoned salt
  11. 1 1/2 c. crab or 1/2 lb. small shrimp
  12. 1 can cream of mushroom soup
  13. 1 can cream of chicken soup
  14. 1 can chopped or sliced mushrooms (optional)

Directions

  1. Saute onion and celery in butter in large saucepan.
  2. Stir in flour.
  3. Gradually add water.
  4. Heat to boiling.
  5. Reduce heat and boil gently 5 minutes.
  6. Add cream soups and crab or shrimp. Simmer 5 minutes.
  7. Discard bay leaf.
  8. Stir in evaporated milk. Reheat to serving temperature.
  9. Do not boil.
