Sour Cream Potato Salad

Ingredients

  1. 5 lb. potatoes, peeled, cubed and cooked
  2. 1 c. diced celery
  3. 2 tsp. salt
  4. 16 oz. sour cream
  5. 3 Tbsp. mustard
  6. 2 large green onions, sliced
  7. 5 Tbsp. vinegar, divided
  8. 4 eggs, coddled
  9. 1 tsp. pepper
  10. 1 clove garlic, minced

Directions

  1. Chill potatoes.
  2. Add celery, 3 tablespoons vinegar and salt; toss lightly.
  3. Place sour cream in small mixing bowl.
  4. Add coddled eggs, remaining vinegar, pepper, mustard, garlic and onion; mix well.
  5. Pour dressing over potato salad; mix well. Chill for at least 3 hours before serving.
