Chocolate-Peanut Butter Chip Pie

Ingredients

  1. 9-inch peanut butter chip crust
  2. 1 c. Reese's peanut butter flavored chips
  3. 1/4 c. butter or margarine, melted
  4. 1/4 c. sugar
  5. 3 Tbsp. Hershey's cocoa
  6. 1 pkg. unflavored gelatin
  7. 1/2 c. sugar
  8. 1 3/4 c. milk
  9. 2 eggs, separated
  10. 1 tsp. vanilla
  11. 1 Tbsp. sugar

Directions

  1. Prepare peanut butter chip crust.
  2. Measure peanut butter chips into mixing bowl.
  3. Blend melted butter, 1/4 cup sugar and cocoa until smooth in second bowl.
  4. Set aside.
  5. Combine 1/2 cup sugar in medium saucepan; add milk.
  6. Beat egg yolks slightly; add to gelatin.
  7. Cook and stir over medium heat until gelatin is dissolved and mixture lightly coats a spoon.
  8. Do not boil.
  9. Remove from heat.
  10. Add vanilla.
  11. Immediately pour 1 cup hot mixture into peanut butter chips.
  12. Stir until chips are melted and mixture is smooth.
  13. Add remaining hot mixture to cocoa mixture.
  14. Stir until smooth with wire whisk.
  15. Chill both mixtures until partially set. Pour chocolate into pie shell.
  16. Beat egg whites with 1 tablespoon sugar.
  17. Fold into peanut butter mixture.
  18. Pour onto chocolate layer.
  19. Chill completely.
  20. Garnish with Cool Whip.
