Strawberry Meringue Pie

Ingredients

  1. 12 (2-inch) sq. saltine crackers with unsalted tops, crushed
  2. 3 egg whites, at room temperature
  3. 1 tsp. salt
  4. 1 c. granulated sugar, divided
  5. 1 tsp. vanilla
  6. 1/4 tsp. cream of tartar
  7. 1/2 c. chopped pecans
  8. 1 (4 oz.) bar sweet cooking chocolate
  9. 1 Tbsp. butter
  10. 4 c. hulled strawberries
  11. 1 c. heavy cream, whipped with 2 Tbsp. confectioners sugar

Directions

  1. Sprinkle 2 tablespoons cracker crumbs on bottom of well-greased 9-inch pie plate (reserve rest).
  2. Beat egg whites until foamy; add tartar and salt.
  3. Beat until stiff peaks form. Gradually beat in granulated sugar, 1 tablespoon at a time, beating until very stiff.
  4. Beat in vanilla until blended.
  5. Fold in pecans and cracker crumbs.
  6. Spread over bottom and sides of pie plate.
