Italian Sausage And Mushroom Strata(Brunch Entree)



  1. 1 lb. Italian sausage, with casings removed
  2. 2 medium onions, sliced
  3. 1 lb. mushrooms, sliced
  4. 1/2 c. scallions, sliced
  5. Italian bread, cut into 1-inch cubes (enough to measure 9 c.; about 1 1/2 loaves)
  6. 1 c. freshly grated Parmesan cheese
  7. 12 large eggs, lightly beaten
  8. 3 1/2 c. milk
  9. 3 Tbsp. Dijon-style mustard


  1. Butter a 15 x 10 x 2-inch baking dish. In a large skillet, heat sausage, onion, mushrooms and scallions for about 20 minutes or until sausage is cooked through and vegetables are tender. Drain off fat. Arrange half of the bread cubes in the prepared baking dish. Spread half of the sausage-vegetable mixture over the bread cubes. Sprinkle half of the Cheddar cheese and half of the Parmesan cheese over the top. Repeat layers.
