Fish Sauce Piquant

Ingredients

  1. 5 qt. water
  2. 3 cloves garlic, chopped
  3. 3 bay leaves
  4. 1/2 c. Worcestershire sauce
  5. 3 Tbsp. black pepper
  6. 1 Tbsp. red pepper
  7. 3 Tbsp. salt
  8. 9 whole cloves
  9. 6 lb. fish fillets, diced
  10. 1 c. oil or butter
  11. 2 c. flour
  12. 1 1/2 c. onion, chopped
  13. 1 c. bell pepper, chopped
  14. 1 1/2 c. celery, chopped
  15. 1 1/2 c. tomato paste
  16. 1 c. green onions, chopped
  17. 2 Tbsp. parsley, chopped

Directions

  1. Add the garlic, bay leaves, Worcestershire, peppers, salt and cloves to the water in a 6 to 8-quart saucepan; bring to a boil and lower heat to simmer.
