Mushroom-Broccoli Casserole

Ingredients

  1. 1 (14 1/2 oz.) can chicken broth
  2. 1/2 pkg. frozen chopped broccoli (10 oz.)
  3. 1 1/2 c. sliced fresh mushrooms
  4. 1/2 c. chopped onion
  5. 2 Tbsp. margarine
  6. 2 Tbsp. all-purpose flour
  7. 1 1/4 c. milk
  8. 1 (8 oz.) can whole corn, drained
  9. 1 Tbsp. chopped pimento

Directions

  1. In saucepan, bring broth and broccoli to boil.
  2. Reduce heat; cover, simmer 5 minutes and set aside.
  3. Cook mushrooms and onions in margarine.
  4. Blend in flour, 1/2 teaspoon salt and 1/8 teaspoon pepper.
  5. Add milk; cook and stir until thickened.
  6. Cook and stir two more minutes.
  7. Add broccoli and broth, corn and pimento.
  8. Heat 3 to 4 minutes.
