Southern Corn Pudding

Ingredients

  1. 8 to 12 ears corn
  2. 1 1/2 tsp. salt
  3. 1 1/4 c. light cream

Directions

  1. Start heating oven to 350°.
  2. Husk corn.
  3. With sharp knife split corn kernels cutting lengthwise of corn kernels.
  4. Then, with back of knife, scrape out kernels until you have 2 cups corn pulp. Combine with salt (or unseasoned salt), cream and pour into greased 1 1/2-quart casserole.
  5. Bake, uncovered, 1 hour.
  6. Serve hot with butter.
  7. Makes 4 servings.
