Pronto Spanish Rice And Beef

Ingredients

  1. 1/2 onion, chopped
  2. 1/2 sweet pepper, chopped (yellow or green)
  3. 1 lb. lean ground beef
  4. 1/2 c. water
  5. 1 (28 oz.) can stewed tomatoes
  6. 1 Tbsp. chili powder
  7. 1 tsp. each salt, oregano, garlic powder
  8. 1 1/2 c. Minute rice
  9. 3/4 c. grated Parmesan cheese, divided

Directions

  1. Brown onion, pepper and beef in frypan. Drain fat. Add water, tomatoes and seasonings. Bring to a boil and boil about 2 minutes. Stir in rice. Cover and remove from heat. Let stand for 5 minutes. Stir in 1/2 cup Parmesan cheese. Sprinkle casserole with remaining 1/4 cup cheese. Yields 6 servings.
