Caramel Ice Cream



  1. 3 c. sugar, divided
  2. 4 eggs, beaten
  3. 4 Tbsp. all-purpose flour
  4. 4 c. milk
  5. 1 tsp. vanilla extract
  6. whipping cream


  1. In heavy skillet, brown 2 cups sugar, stirring constantly until caramelized, being careful not to scorch it.
  2. Immediately combine eggs, remaining sugar, flour and milk in a large saucepan. Smooth out any lumps and bring to a boil.
  3. Carefully add caramelized sugar and stir constantly until mixture is melted. Remove from the heat; add vanilla.
  4. Pour into the cylinder of an ice cream freezer; add enough whipping cream to fill cylinder 3/4 full. Freeze according to manufacturer's directions.
  5. Yields about 1 gallon.
