Chicken And Dressing Casserole

Ingredients

  1. 2 1/2 or 3 pound chicken, boiled and deboned
  2. 1 stick butter
  3. 1 pkg. Stove Top stuffing mix
  4. 1 can sliced mushrooms
  5. 1 cup sour cream
  6. 1 can cream of chicken soup
  7. 1 cup chicken broth
  8. 2 Tbsp. lemon juice
  9. 1 cup chopped celery
  10. 3 Tbsp. chopped bell pepper
  11. 3 Tbsp. chopped onion
  12. 1/2 tsp. salt

Directions

  1. Melt butter.
  2. Prepare stuffing mix as directed. Mix well with butter. Spread 3/4 mixture in a greased Pyrex casserole dish.
  3. Lay chicken pieces on top (can use chicken breast).
  4. Add drained mushrooms.
  5. Mix together remaining vegetables, lemon juice, salt, sour cream, cream of chicken soup and 1/2 of chicken stock. Spoon over chicken and sprinkle remaining dressing mix on top. Pour remaining chicken stock over top. Bake 45 minutes in 350° oven.
