Roasted Tomato Salsa

Ingredients

  1. 2 large ripe tomatoes (about 1 1/4 lb.)
  2. 2 to 3 jalapeno peppers
  3. 1 garlic clove (unpeeled)
  4. 1/3 c. sweet onion, finely chopped
  5. 1/4 c. fresh cilantro, chopped
  6. 2 Tbsp. fresh lime juice
  7. 1/2 tsp. salt

Directions

  1. Heat a large cast-iron skillet over medium heat. Add whole tomatoes, jalapenos and garlic. Cook 15 minutes or until tomatoes are blackened, turning frequently. Remove from pan; cool slightly.
