Beef Jerky

Ingredients

  1. 1 1/2 lb. flank steak
  2. 1/2 tsp. seasoned salt
  3. 1/3 tsp. garlic
  4. 1/3 tsp. black pepper
  5. 1 tsp. onion powder
  6. 1/4 c. Worcestershire sauce
  7. 1/4 c. soy sauce

Directions

  1. Trim fat from steak.
  2. Semi-freeze for ease in slicing.
  3. Slice with the grain into 1/8-inch strips.
  4. Marinate overnight in glass dish, thoroughly covering the meat with sauce made from other ingredients.
  5. Lay strips of marinated meat in single layer on oven racks.
  6. Placing a cookie sheet underneath will catch drippings. With oven door opened a crack, roast at lowest possible temperature (125° to 140°) for 8 to 12 hours.
  7. Taste occasionally until desired chewiness is attained.
  8. Keep in covered jar.
  9. Yields 1/2 pound of jerky.
