Chicken Marengo

Ingredients

  1. 4 halved chicken breasts
  2. 1 c. fresh mushrooms, sliced
  3. 2 Tbsp. chopped parsley
  4. 1/4 tsp. thyme
  5. 1 beef bouillon cube (yes, beef not chicken)
  6. 1 c. hot water
  7. 1 (12 oz.) can Hunt's tomato paste
  8. 1/4 c. or more dry sherry
  9. 1/4 c. or more sweet sherry
  10. 1 large onion

Directions

  1. Sprinkle chicken with Lawry's salt and pepper; brown in oil in large frying pan or electric frypan.
  2. Remove from pan.
  3. Chop onion; brown in butter in same pan.
  4. Add mushrooms.
  5. Add a dash more Lawry's, pepper and garlic powder.
  6. Remove from pan.
  7. Melt bouillon in hot water in another pan.
  8. Add tomato paste, thyme, parsley and wine; mix well.
  9. Add onion and mushrooms.
  10. Put chicken back in pan; pour sauce over.
  11. Cover; cook at low temperature for 45 minutes (220° on electric frypan).
  12. Serve over plain white rice.
