Hummingbird Cake

Ingredients

  1. 3 c. all-purpose flour
  2. 2 c. sugar
  3. 1 tsp. salt
  4. 1 tsp. soda
  5. 1 tsp. cinnamon
  6. 3 eggs, beaten
  7. 1 1/2 c. salad oil
  8. 1/2 tsp. vanilla
  9. 1 (8 oz.) can crushed pineapple (undrained)
  10. 2 c. pecans or walnuts, chopped
  11. 2 c. bananas (not mashed)

Directions

  1. Combine dry ingredients in large bowl; add eggs and oil, stirring until dry ingredients are moistened.
  2. Do not beat.
  3. Stir in vanilla, pineapple, 1 cup pecans and bananas.
  4. Spoon into 3 well-greased 9-inch cake pans.
  5. Bake at 350° for 30 minutes.
  6. Cool in pans for 10 minutes.
  7. Cool completely.
  8. Frost with Cream Cheese Frosting.
