Chocolate Cream Pie

Ingredients

  1. 2 c. milk
  2. 1/4 c. Karo light corn syrup
  3. 4 Tbsp. cornstarch
  4. 1/4 tsp. salt
  5. 1 Tbsp. butter
  6. 1 (9-inch) pastry shell
  7. 2 sq. unsweetened baking chocolate
  8. 1/2 c. sugar
  9. 2 egg yolks
  10. 1 tsp. vanilla

Directions

  1. Scald 1 3/4 cups milk with chocolate and Karo into top of double boiler.
  2. Blend cornstarch with remaining milk.
  3. Mix in sugar and salt. Add egg yolks and beat until well blended.
  4. Add all at once to scalded chocolate milk. Stir constantly until thickened. Cover and cook 5 to 7 minutes longer. Remove from heat. Add butter and vanilla. Cool.
  5. Pour into baked shell. Top with meringue. Bake at 350° for 12 to 15 minutes, or until meringue is golden.
