Tamale Pie

Ingredients

  1. 1/2 c. yellow cornmeal
  2. 1 1/2 c. water
  3. 1 1/4 tsp. salt
  4. 1 1/2 c. evaporated milk
  5. dash of red pepper
  6. 1 small onion, chopped
  7. 1 Tbsp. fat
  8. 1 lb. ground beef
  9. 1 c. tomatoes
  10. 2 Tbsp. pimentos, chopped

Directions

  1. Measure cornmeal, water and salt in a heavy saucepan.
  2. Boil until mixture begins to thicken, then add milk.
  3. Continue cooking slowly for 8 to 10 minutes.
  4. Stir constantly.
  5. Brown beef in skillet; drain.
  6. Add onion, tomatoes, pimentos and spices.
  7. Line a baking dish with 3/4 of the cornmeal mush.
  8. Pour beef mixture in dish.
  9. Cover with remaining mush.
  10. Bake at 350° for 30 to 45 minutes.
  11. Serves 6.
