Vegetarian "Meat" Balls
- 1 pkg. tofu (firm or hard)
- 1 1/2 c. Italian seasoned bread crumbs
- 1 egg
- 1 onion
- 1/2 c. walnuts, chopped
- 1/2 c. fresh parsley, minced
- Mix all ingredients together.
- In a skillet, heat 1 to 2 tablespoons light oil.
- Form mixture into balls. Saute balls in skillet until light brown.
- Add to marinara sauce or sprinkle with Parmesan cheese and serve with pasta.
