Beef Stroganoff

Ingredients

  1. 1 1/2 c. fresh sliced mushrooms
  2. 1 medium onion, chopped
  3. 1 clove garlic, minced
  4. 2 Tbsp. margarine or butter
  5. 1 lb. boneless beef sirloin steak (1/2-inch thick), cut across grain in thin strips
  6. 3 Tbsp. all-purpose flour
  7. 1/2 tsp. salt
  8. 1/4 tsp. pepper
  9. 1 c. hot water
  10. 1 Tbsp. sherry
  11. 2 instant beef bouillon
  12. 1/2 tsp. Worcestershire sauce
  13. 1 c. dairy sour cream
  14. catsup

Directions

  1. Combine mushrooms, onion, garlic and margarine in a 2-quart casserole.
  2. Cover.
  3. Microwave at High (100%) until mushrooms and onions are tender, 2 to 4 minutes.
  4. Shake beef, flour, salt and pepper in plastic bag until beef is coated.
  5. Stir beef and remaining ingredients, except sour cream, in vegetable mixture. Microwave, covered, at high (100%) for 5 minutes.
  6. Reduce power to Medium-high (70%).
  7. Microwave until beef is tender, 20 to 30 minutes, stirring after half the cooking time.
  8. Let stand 5 to 10 minutes.
  9. Stir in sour cream until well blended.
  10. Makes 4 to 6 servings.
